Heat Oil: Heat 1-2 tablespoons of oil in a pan over medium heat.
Temper Mustard Seeds: Add 1 teaspoon of mustard seeds to the hot oil. Let them splutter.
Add Ridge Gourd: Put in the long cut pieces of ridge gourd (ridge ground) into the pan.
Seasoning: Sprinkle 1 teaspoon of salt and 1/2 teaspoon of turmeric powder over the ridge gourd.
Mix Well: Stir everything together so that the ridge gourd is coated evenly with the spices.
Cooking Process: Allow the ridge gourd to cook on medium flame. Stir occasionally to ensure even cooking.
Flip and Cook: Once one side of the ridge gourd pieces is cooked, flip them gently to cook the other side. Repeat this process until the ridge gourd is uniformly cooked and tender.
Serve: Once cooked thoroughly, remove from heat and serve hot with roti or Pakhala (an Odisha dish).
