Equipment

Ingredients
- 2 Ridge Gourds peeled and cut into long pieces
- 1 tsp Mustard Seeds
- Salt to taste
- 1/2 tsp Turmeric Powder
- 1-2 tbsp Oil for cooking
Instructions
- Heat Oil: Heat 1-2 tablespoons of oil in a pan over medium heat.
- Temper Mustard Seeds: Add 1 teaspoon of mustard seeds to the hot oil. Let them splutter.
- Add Ridge Gourd: Put in the long cut pieces of ridge gourd (ridge ground) into the pan.
- Seasoning: Sprinkle 1 teaspoon of salt and 1/2 teaspoon of turmeric powder over the ridge gourd.
- Mix Well: Stir everything together so that the ridge gourd is coated evenly with the spices.
- Cooking Process: Allow the ridge gourd to cook on medium flame. Stir occasionally to ensure even cooking.
- Flip and Cook: Once one side of the ridge gourd pieces is cooked, flip them gently to cook the other side. Repeat this process until the ridge gourd is uniformly cooked and tender.
- Serve: Once cooked thoroughly, remove from heat and serve hot with roti or Pakhala (an Odisha dish).

Ensure the ridge gourd pieces are cut evenly to ensure uniform cooking.
