  2. • Choose your favorite raw mangoes. It's great if they are fresh.

  3. • You can boil them with the skin on, but I prefer peeling them before boiling.
  4. • Peel the mangoes and cut them into pieces, removing the hard seed in the middle.
  5. 2. Cooking the Mangoes:
  6. Place the mango pieces in a pressure cooker with a little water (about a glass for 2 kg of mangoes).
  7. • Cook until you hear 2-3 whistles on medium heat.
  8. Once cooked, let them cool to avoid burning your hands.
  9. • Strain the mixture to remove any small crunchy bits.
  10. 3. Making the Aam Panna:
  11. • Take the smooth mango paste and add sugar. You can also use jaggery if you prefer.
  12. Add spices like roasted cumin powder, black salt, regular salt, and some mint leaves for flavor.
  13. Mix well and cook for another 10-15 minutes to ensure all flavors blend well.
  14. 4. Storing the Aam Panna:
  15. • To store it for a longer time (up to a year), boil the mixture again for 10-15 minutes.
  16. • Store the frozen cubes in airtight containers or zip-lock bags in the freezer.
  17. 5. Serving the Aam Panna:
  18. • Whenever you want to enjoy Aam Panna, take out the required number of cubes.
  19. Mix with cold water, soda, or Sprite, the way you like.

  20. Add ice and serve chill.

  22. • You can also use these mango cubes to enhance the flavor of tamarind chutney.
  23. • For a fancy look, you can add a bit of food color while preparing the mixture.

  24. The frozen mango cubes can be easily popped out from ice cube trays.
