Mixed Vegetable paratha
Mixed vegetable paratha is a popular Indian flatbread. There are different types of parathas famous in Punjab but is enjoyed all over the country. It’s a hearty dish where whole wheat dough is filled with a flavorful mix of grated and finely chopped vegetables like carrots, cabbage, and cauliflower, along with paneer and spices.
A versatile dish that is enjoyed hot with yogurt, or a variety of chutney and curries. It’s not only filling but also packed with vitamins and minerals from the vegetables, making it a wholesome meal.
Mixed Vegetable Paratha
Mixed vegetable stuffed parathas is a wholesome dish that combines the goodness of whole wheat with a flavorful filling. These parathas are perfect for a nutritious breakfast, lunch, or dinner. The dough is soft making it easy to roll out and shape, while the stuffing is a vibrant mix of different types of vegetables.The preparation involves a few key steps: making the dough, seasoning the vegetables, and then assembling and cooking the parathas. The result is a crispy, golden brown paratha with a flavorful filling.
Ingredients
- For the Dough:
- Whole wheat flour Atta – 2 cups (250 gm)
- Salt – 1 tsp
- Water as required
- For the Stuffing:
- Grated Carrot – 1 or 1 bowl
- Finely chopped onion -1
- Finely chopped Cabbage – 1 bowl
- Finely chopped Cauliflower – 1 bowl
- Finely chopped Coriander leaves as needed
- Grated Paneer – 1/2 cup 50 gm (if needed)
- Salt to taste
- Oil for roasting parathas
Instructions
- Prepare the Vegetables:
- Squeeze excess water from grated and finely chopped vegetables using salt (1 tsp).
- Prepare the Dough:
- In a mixing bowl, combine the whole wheat flour and salt.
- Gradually add water and knead into a smooth, semi-soft dough and mix the vegetables and then knead it.
- Cover and let it rest for 20-25 minutes.
- Assemble the Parathas:
- Divide the rested dough into small balls.
- Roll each dough balls in to a small circle.
- Roll the stuffed dough ball into a slightly thicker circle than a regular paratha.
- Cook the Parathas:
- Heat a non-stick tawa or griddle.
- Place the rolled paratha on the tawa and cook on low-medium flame.
- When bubbles start forming, flip the paratha.
- Cook both sides until golden brown, applying oil or ghee as needed.
- Serve:
- Serve the hot parathas with tomato sauce, thick curd, or any gravy of your choice.
