The dish features crispy cubes of paneer (cottage cheese) that are lightly coated in a flour mixture and then shallow-fried to golden perfection. Ingredients
- For Coating and Frying:
- Cottage Cheese: 400 grams
- All-Purpose Flour: 1 spoon
- Corn Flour: 2 spoons
- Kashmiri Lal Mirchi powder
- Salt
- Oil for shallow frying
- For Sauce:
- Oil: 2 spoons
- Water: 1 bowl
- Corn Flour: 2 spoons
- Soya Sauce: 1.5 spoons 1 spoon for mixing with water, 1/2 spoon for garnish
- Vinegar: 1 tbsp
- Green Chilli Sauce: 1 tbsp
- Ground Ginger and Garlic
- Salt
- Kashmiri Lal Mirch Powder
- Black Pepper Powder
- Finely chopped Green Chilli: 2-3
- Finely chopped Spring Onion
- Finely chopped Capsicum
- Finely chopped Onion
Instructions
- Preparation of Ingredients:
- Finely chop garlic, ginger, green chilli, capsicum, onion, and spring onion.
- Store garlic in a jar with water, salt, and vinegar or lemon juice, and keep it in the fridge.
- Coating the Cottage Cheese:
- Soak the cottage cheese in water for a short time, then drain.
- Mix all-purpose flour and corn flour in a bowl.
- Coat the cottage cheese cubes with the flour mixture.
- Add Kashmiri Lal Mirch Powder paste and mix well.
- Add salt to taste.
- Coat again with the remaining corn flour.
- Frying the Cottage Cheese:
- Heat oil in a pan.
- Shallow fry the coated cottage cheese cubes until golden brown and crispy.
- Remove the fried cottage cheese cubes and place them on a plate.
- Remove excess oil from the pan, leaving about 2 spoons.
- Preparing the Sauce:
- In a bowl, mix water, corn flour, soya sauce, vinegar, and green chilli sauce.
- Add ground ginger and garlic, salt, Kashmiri Lal Mirch Powder, and black pepper powder.
- Stir well.
- Cooking the Sauce:
- Heat the remaining oil in the pan.
- Add finely chopped capsicum, onion, and green chilli.
- Sauté until they are slightly softened.
- Add the prepared sauce mixture to the pan.
- Stir and cook until the sauce thickens.
- Final Steps:
- Add the fried cottage cheese cubes to the sauce.
- Toss gently to coat the cubes with the sauce.
- Garnish with finely chopped spring onion.
- Serve:
- Serve hot and enjoy your Chilly Paneer with Roti, Paratha or Rice
