- Heat the Oil:
- In a pan, heat 2 tablespoons of oil over medium heat until hot.
- Add Spices:
- Once the oil is hot, add the dry red chilies, cumin seeds, and mustard seeds. Sauté for a few seconds until fragrant.
- Cook Onions:
- Add the sliced onions to the pan. Stir well to combine.
- Be careful not to over-fry the onions; you want them to soften without turning brown.
- Add Potatoes:
- Introduce the thinly sliced potatoes to the pan and sauté for 1-2 minutes on low-medium heat.
- Season:
- Add salt and turmeric powder. Mix well to ensure the potatoes are evenly coated.
- Cover and Cook:
- Cover the pan and reduce the heat to low. Cook for 2-3 minutes.
- Stir and Continue Cooking:
- After 2 minutes, remove the lid and mix the contents well.
- Cook uncovered for an additional 10 minutes, stirring occasionally to ensure even cooking.
- Serve:
- Once the potatoes are tender and cooked through, remove from heat and serve hot.
