Ingredients

  • Potatoes thinly sliced – 3
  • Onions sliced – 2 medium
  • Dry red chilies – 2
  • Cumin seeds – 1 tsp
  • Mustard seeds – 1 tsp
  • Salt to taste approximately 1/2 tsp
  • Turmeric powder – 1/2 tsp
  • Chili powder – 1/4 tsp if required
  • Oil – 2 tbsp

Instructions

  • Heat the Oil:
  • In a pan, heat 2 tablespoons of oil over medium heat until hot.
  • Add Spices:
  • Once the oil is hot, add the dry red chilies, cumin seeds, and mustard seeds. Sauté for a few seconds until fragrant.
  • Cook Onions:
  • Add the sliced onions to the pan. Stir well to combine.
  • Be careful not to over-fry the onions; you want them to soften without turning brown.

  • Introduce the thinly sliced potatoes to the pan and sauté for 1-2 minutes on low-medium heat.
  • Season:
  • Add salt and turmeric powder. Mix well to ensure the potatoes are evenly coated.
  • Cover and Cook:
    Karchi - kadhai
  • Cover the pan and reduce the heat to low. Cook for 2-3 minutes.
  • Stir and Continue Cooking:
  • After 2 minutes, remove the lid and mix the contents well.
  • Cook uncovered for an additional 10 minutes, stirring occasionally to ensure even cooking.

  • Once the potatoes are tender and cooked through, remove from heat and serve hot.
